Today's Recipe: Leah's Spaghetti Squash Casserole

This is not Leah's, but it looks a lot like this (minus the green).
Leah cooked this splendid spaghetti casserole for my b'day yesterday (using spaghetti squash, for those sensitive to pasta) and I thought I'd share her recipe with you. This is good stuff.

Leah's Spaghetti Without the Spaghetti:
  • 1 ½ large spaghetti squash, cooked in microwave and forked into big bowl
  • Added 1/3 stick butter to the hot squash and some salt and pepper and mixed well
  • While squash was cooking:
  • Caramelized 2 large onions and added to big bowl of hot squash
  • Browned 1 lb. ground turkey, added bunch of chopped mushrooms and about 3 cups spaghetti sauce (I like Prego); added that to the bowl
  • Stirred in 2 cups low fat sour cream, 1 cup ricotta cheese and mixed well
  • Poured into greased baking dish
  • Topped with grated 3-cheese
  • Baked 45 minutes at 350 – put under broiler at the end of 3-4 minutes to brown top
